Who we are

Dillay - Dexter Beef

It begins with the breed.

Dexter cattle produce exceptional, fine-grained beef with deep flavour that is unique to the breed. In a recent steak tasting competition of native breeds organized by Country Life, the Dexter breed won, garnering the highest points for their delicious steaks! @countrylifemagazine


You are what you eat.

Our Dexters are 100% pasture-fed their whole lives. When not munching hay, they graze a wide variety of plant species in our diverse pastures and woodland edges, so their nutrition is naturally complete. Instinctively they will choose different plants according to their needs. For example, in summer, with calves at hoof, our cows mow up stinging nettles for their iron, calcium and magnesium as well as protein and vitamins.Hence Dillay beef is full of nutrients and has relatively high levels of beneficial omega-3 fats and antioxidants. Our herd’s natural, diverse diet also contributes to Dillay beef’s delicious flavour. 


Patience & Care

At the Dillay, our stock animals live peaceful, happy, and exceptionally long lives outdoors. Raised for at least four to five years, they grow at a natural pace and in step with the seasons, developing proper muscle structure and deep, fine marbling, Thanks to these added years of contentment, our beef is naturally more tender and incredibly flavourful.We honour and celebrate this exceptional product by treating it with the utmost respect until it is presented to you. We use specialist butchers, who provide expert cuts and dry age (hang) the beef for 28 to 35 days, the ideal time for moisture to slowly evaporate and for natural enzymes to refine the texture of the breed’s small primal cuts. Our beef’s natural flavour and tenderness are intensified.
